Cornish Hens With Vegetables

Ingredients
2 cornish hens, split lengthwise
3 tbsp. lemon juice
3 tbsp. olive oil
1 clove pressed garlic
2 tbsp. dry rosemary
4 shallots, unpeeled
Baby carrots
Red skinned potatoes, slice 1/4 inch thick

1)  Place hens, skin side up, mix lemon juice, oil, rosemary and garlic. Pour over hens. Cut shallots in half lengthwise.
2)  Bake, uncovered at 450 degrees for 35 to 40 minutes.

Cornish Hens With Grapes

Roasted Cornish Hen with Grapes

Ingredients
1 1/2 pounds mixed red and green seedless grapes
8 shallots, root end intact, halved if large
6 sprigs thyme, plus leaves for hens
2 tablespoons olive oil
Coarse salt and ground pepper
4 Cornish game hens (1 to 1 1/4 pounds each)

1)  Preheat oven to 450° .
2)  On a rimmed baking sheet, toss grapes and shallots with thyme sprigs, oil, 1 teaspoon salt, and 1/4 teaspoon pepper.
3)  Tie legs with kitchen twine; nestle hens among grapes on baking sheet, breast side up.
4)  Season hens generously with salt and pepper; sprinkle with thyme leaves.
5)  Roast, basting hens occasionally with pan juices, until an instant- read thermometer inserted in the thickest part of leg (avoiding bone) registers 160° , 30 to 35 minutes.

Escarole And Beans

Escarole and Beans
===============
Ingredients:  2 Heads Escarole, 2/3 Cannoloni Beans, Olive Oil, Garlic, Meat

1)  Scrub and cut escarole, boil it, put in strainer but leave water on.
2)  Boil Meat
3)  Saute Garlic
4)  Add Beans To Oil – Simmer
5)  Add Meat — Simmer
6)  Cook 1 Hour
7)  Add Another Can of Beans — Simmer 20 Minutes
8)  Sit For A While

Meatball Ingredients and Prep

Beef/Pork/Veal
Salt, Pepper, Garlic (cut tiny)
2 Eggs
Bread Crumbs
Mix by hand.
Frying Meatballs
– Oil (not too much) in Pan, Piece of Onion, Clove of Garlic

Cooking
– Fry Meatballs (use Pam)
– Fry Paste, add little water (3-4 minutes)
– Becomes base of gravy.

Crushed Tomatoes
Optional:  Tomato Sauce or Tomato Puree
Tomato Paste

Meatball Ingredients and Prep

Beef/Pork/Veal
Salt, Pepper, Garlic (cut tiny)
2 Eggs
Bread Crumbs
Mix by hand.
Frying Meatballs
– Oil (not too much) in Pan, Piece of Onion, Clove of Garlic

Cooking
– Fry Meatballs (use Pam)
– Fry Paste, add little water (3-4 minutes)
– Becomes base of gravy.

Braciole:  Pork Cutlets or Beef Sandwich Steak; Salt; Pepper; Garlic; Parsley; Cheese

Gravy Pot

- Start with crushed tomatoes, tomatoe sauce or puree(puree could be bitter).
– Cook for 30 min to 1 hour (while frying meatballs).
– Add paste (not garlic or onion).
– Add wine, cheese.
– Add meat (neckbones, braciole, country style pork ribs).

Troubleshooting
– Baking soda, sugar

Ingredients
–  Potatoes (3)
–  Onions (Spanish Onion)  (1)  Sliced Thick
–  Squash (Smaller if possible)
–  String Beans
–  Large Can Del Monte Tomato Sauce (Or Crushed Tomatoes)
–  Cooking Oil (Canola or Corn Oil)

Step 1
– Cube Squash
– Saute Onions, Potatoes and Squash
– For 15 minutes

Step 2
– Add Tomato Sauce
– Simmer 30 minutes.

Step 3
– Boil water w/salt for string beans.
– Leave long
– Put beans in water for six minutes, not too long.
– Add to sauce.
– Simmer additional 15 minutes.

Chicken Cacciatore (or Pork Chop)

Ingredients
1)   Either chicken parts or boneless.
2)  Big white onion.  (Not yellow).
3)  Canola or corn oil.  (Regular oil – not olive).

1)  Brown chicken in a large saute pan.  Then remove.
2)  Saute onions and peppers.   Otherwise onions will burn.  One bell pepper any color.
3)  Add Delmonte or Shop Rite crushed tomato or tomato sauce.  No garlic or oregano. (You have onion).
4)  Use salt pepper.  Can use vinegar or hot peppers for spiciness.

Note – Can do same for pork chops. Boneless or with bone.
